1. Pecans Buns

Pecans Buns

INGREDIENTS:

  • 1 glass water
  • 2 tablespoons dry yeast
  • 1 tablespoon vanilla sugar or 1 tablespoon vanilla pod
  • 1 tablespoon brown sugar
  • 1 cup flour
  • ¼ cup sunflower oil
  • 1 cup chopped pecans
  • 3 tablespoons honey

For toppings:

  • ½ szklanki oleju kokosowego
  • ½ szklanki karobu zmielonego
  • 1 łyżka miodu
  • 1 łyżka masła orzechowego

INSTRUCTIONS:

1. In a small bowl, dissolve brown sugar and yeast in warm water. Stir well to combine. Then add flour, sunflower oil and vanilla sugar. Stir carefully. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.

2. While dough is rising, knead it again and then roll it out with a thickness of 1.5 centimeters. Sprinkle with pecans and pour with honey. Prepared dough roll into an 18×14 inch rectangle. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume.

3. Meanwhile, preheat oven to 190 degrees C and bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter.

4. Now start the preparation of a toppings. All the ingredients for the toppings pass to the saucepan over medium heat, stirring constantly. Pour the pecans buns with glaze and wait until freeze. Alternatively, you can sprinkle with chopped pecans.

2. Pecan Tart

Ingredients for dough:

  • 185 g plain flour
  • 50 g xylitol or coconut sugar 
  • 125 g cold butter
  • 1 yolk egg
  • 1 teaspoon cold water

Ingredients for toppings:

  • 2 cups fried pecans
  • 6 yolks egg
  • 1/2 cup pół agave syrup
  • 100 g brown coconut sugar
  • 90g melted butter
  • 1/4 cup cream

INSTRUCTIONS:
1. Mix thoroughly all ingredients for dough, wrap into the foil and put to the fridge about 30 minutes.

2. Turn dough out onto a lightly floured surface, align. Preheat oven to 180 degrees C and bake in preheated oven for 15 to 20 minutes, until slightly brown.

3. Mix thoroughly all ingredients for toppings, except pecans until smooth. Put pecans on the dough and on the top pour a prepared mixture.Bake about 30 minutes, let cool. Serve with maple syrup.
